It's officially Christmas break!!

I'm so relieved this semester is over! I'm officially done with my undergraduate classes at UAB...it's so crazy!! Now its on to my internship next semester and then GRADUATION!!!! I cannot believe it...4 years goes by really fast! I got my student teaching placement today and I am so happy with it! I was afraid that I would get place in an inner city school again because my area code is Birmingham city...which is weird cause where I live is actually considered Homewood, BUT I DIDN'T!! I will be teaching 3rd grade at Rocky Ridge Elementary School in Hoover! I am sooooo excited! I was hoping I would get 3rd grade because I hear a lot of good things about that grade, so I got lucky. Rocky Ridge is a really nice school too...it's very diverse though so hopefully all of my students speak English! Anyway, I'm excited about it so i'll update more on that when I get there!

In other news...I got a nanny job! I will be keeping a little girl named Bayona (weird huh?) Monday through Friday...i'm taking her to daycare in the morning and pick her up when I get out of school and keep her till 6 or so. I'm really excited about it...I babysit her every now and then now so I already know the family and they are great. Both of the parents are residents at Childrens Hospital. She is 18 months old and cute as can be!

A yummy recipe!

I made this recipe up for the most part and I thought it was really good!!! Thame loved it...he was licking the pan after we ate haha!

Chicken with a creamy mustard sauce:

-Chicken breasts or tenders (however much you think you need...I used 6 tenders)
-spicy brown mustard (3 tbsp)
-garlic (1 tsp.)
-onion (yellow or white)- (1/2 cup)
-heavy cream-( 1/2 cup)
-white wine- a splash
-salt/pepper
-olive oil (2 tbsp)
-butter (1 tbsp)

*Season chicken breast with salt and pepper on both sides. Add olive oil and butter to a skillet. Add the chicken and cook till golden brown on each side. Remove the chicken and keep warm.
*Add onion and garlic to the same skillet and saute quickly.
*Add the splash of wine and boil quickly to thicken and reduce. (1 or 2 min)
*Add cream and mustard and stir together.
*replace the chicken in the skillet and cover with sauce and let it simmer for a few minutes.
*serve and eat!

It was super easy and really really yummy! Enjoy and let me know what you think if you make it!

Wow, sorry for the lack of updates!

This was the last week of classes for this semester, which means that EVERYTHING was due. Therefore, I was super busy trying to scramble and get things done. I still have 1 final next Thursday and then I will officially be in my internship! I should know something about my student teaching placement in the next week or so, hopefully!

Thanksgiving was great! Just went home for the week and visited with everyone. I am so disappointed in myself for not taking but like 2 pictures the whole time! I promise to take more over the Christmas break. Thame and I put up the Christmas tree this past week and it looks good! I still need to find a tree topper or ribbon or something, cause something is missing and then I will post a picture for y'all. I can't believe Christmas is coming up so soon! I need to start shopping!

Anyway, I hope everyone is doing great and be looking for another post soooooooon.
